    Crab Imperial


    1# crabmeat (jumbo lump preferred)
    6 tbsp butter (3/4 stick)
    2 tbsp flour
    1 cup milk
    2 tbsp lemon juice
    1 tbsp parsley
    1/2 tsp celery salt
    1/8 tsp pepper
    1/4 tsp worcestershire

    Preheat Oven for 350 degrees.  Melt butter in pan.  Add flour and stir until smooth.  Add milk and stir unitl thickened.  Remove from heat and add the lemon juice, celery salt, pepper, parsley and worcestershire (can add other ingredients to spice it up if preferred, like sliced pimientos, sliced peppers, etc.) .  Once mixed together, fold in the crabmeat and put in a greased or buttered dish (preferably shallow dish).  You may sprinkle with cheddar cheese (optional), and bake for at least 25 minutes.  Once cooked, broil for a couple minutes to crisp the top layer, and serve on your favorite entree (stuffed flounder, stuffed chicken breast, etc).  Very good all on its own!  Sprinkle a little old bay on top and garnish with chopped green onions and enjoy!
